Beer-braised Short Ribs Recipe

First prepare your glass, wet the rim with a lime and dip in a dish with salt. Then add a fresh squeezed lime and mix it with a light Mexican lager or Amber beer… raise your glass with your fellow passengers and say “salud!!”

Gate to Paradise 

​

Half Lager and Half Apple Cider. Serve the cider first in the glass and then with a spoon pour the lager slowly.  

Chicken in the Sky 

 

Ingredients 

  • 1 cup butter 

  • 2 tablespoons garlic salt 

  • 2 tablespoons paprika 

  • 1 can Amber Craft Beer 

  • 1 whole chicken  

  • Salt and Pepper  

 

Directions  

  1. Preheat an outdoor grill for low heat. 

  1. Melt half cup of butter and mix it with one tablespoon garlic salt, one tablespoon paprika. Add salt and pepper. 

  1. Drink half can of the beer… to get in the mood, leave the remainder in the can. Add the other half cup of butter, garlic salt, paprika and desired salt and pepper to beer can.  

  1. Place can on a disposable baking sheet. Set chicken on can, inserting can into the cavity of the chicken. Baste chicken with the melted, seasoned butter. 

  1. Place baking sheet with beer and chicken on the prepared grill.  

 

Cook for 3 hours or until is done.

Chili Departure 

 

Ingredients 

  • 2 pounds ground beef chuck 

  • 1 pound bulk Italian sausage 

  • 4 (15 ounce) cans chili beans, drained 

  • 2 (28 ounce) cans diced tomatoes with juice 

  • 1 (6 ounce) can tomato paste 

  • 1 large yellow onion, chopped 

  • 3 stalks celery, chopped 

  • 1 green bell pepper, seeded and chopped 

  • 1 red bell pepper, seeded and chopped 

  • 2 green chile peppers, seeded and chopped 

  • 1 tablespoon bacon bits 

  • 4 cubes beef bouillon 

  • ½ cup Lager Craft Beer 

  • ¼ cup chili powder 

  • 1 tablespoon minced garlic 

  • 2 teaspoons ground cumin 

  • 1 teaspoon dried basil 

  • 1 teaspoon salt 

  • 1 teaspoon ground black pepper 

  • 1 teaspoon cayenne pepper 

  • 1 teaspoon paprika 

  • 1 teaspoon sugar 

 

Directions 

  1. Heat a big pot over medium-high heat. Beat the ground beef and sausage into the hot pan and cook until evenly browned. Drain to reduce the grease. 

  1. Serve in the chili beans with the diced tomatoes and tomato paste. Add the onion, celery, green and red bell peppers, chile peppers, bacon bits, bouillon, and beer. Season with chili powder, garlic, cumin, hot pepper sauce, basil, salt, pepper, cayenne, paprika, and sugar. Stir to blend, then cover and simmer over low heat for at least 2 hours, stirring occasionally.  

Flying Fish 

 

Ingredients 

  • Canola or Maize oil for frying 

  • 8 fillets of cod, pollack, stripped bass or  Mahi Mahi 

  • 1 cup all-purpose flour 

  • 2 tablespoons garlic powder 

  • 2 tablespoons paprika 

  • 2 teaspoons salt 

  • 2 teaspoons ground black pepper 

  • 1 egg 

  • 1 Amber Craft Beer  

  • Salt and pepper  

 

Directions 

  1. Heat oil.  

  1. Rinse fish, pat dry, and season with salt and pepper. 

  1. Mix the flour, garlic powder, paprika, salt, and pepper. Stir egg into dry ingredients. 

  1. Slowly pour the beer until a thin batter is formed.  

  1. Dip fish fillets into the batter, then put one by one into hot oil.  

  1. Fry fish until it reaches a golden color. 

  1. Remove grease with paper towels.

Chicken Arrival 

 

Ingredients 

  • 2 eggs 

  • 1 cup of Craft Pilsner Beer 

  • 1 1/2 cup plain flour 

  • 2 teaspoon baking soda 

  • 2 teaspoon salt 

  • 1 teaspoon pepper 

  • 2 chicken breasts 

  • Vegetable oil 

 

Directions 

  1. Heat oil.  

  1. Mix all the beer batter ingredients in a bowl until combined. 

  1. Cut the chicken into strips. 

  1. Dip chicken strips into the batter, then put one by one into hot oil.  

  1. Fry on each side until it reaches a golden color. 

  1. Remove grease with paper towels.
